The Summer Salad Series: Cobb Salad

I love a good main course salad.

It needs to have more than just a few veggies though. Add a good amount of protein, and some bacon doesn’t hurt, like in this salad, and you have an easy, and filling, salad to serve for dinner!




Cobb Salad

  1. Lettuce, chopped into bite size
  2. 1 hard boiled egg, peeled and sliced
  3. 1 tomato, hulled and diced
  4. 1 avocado, peeled, seeded and cut into chunks
  5. 1/3 cup red onion, diced
  6. 2-3 slices of cooked bacon, chopped
  7. 1/4 cup blue cheese crumbles
  8. 1/3 cup ranch or your choice of dressing
  1. Prepare salad with lettuce, tomatoes, egg, avocado, red onion, blue cheese crumbles, chopped bacon and dressing.
  2. Serve and enjoy!

Quick tip: Hard boil eggs and cook the bacon at the beginning of the week,and store in the fridge to make this salad even easier to assemble quickly for lunch or dinner later in the week!

    What a yummy recipe!!! I can’t wait to try it, again I’ll leave out the blue cheese, but the rest looks super yummy!!! I love getting reminded of super simple and quick salads.
