Protein Pancakes

There’s nothing like a beautiful stack of fluffy pancakes topped with melted butter and sweet syrup! If you love pancakes, but also love to fit into your pants, this recipe is for you.

Just a few simple ingredients, these cakes are packed with protein and low carb. I make them regularly and both my husband and daughter have given them their seal of approval. We top them with a low sugar syrup and add a side of turkey sausage for absolute deliciousness any day of the week!

When you want a stack of pancakes and still fit in your jeans, these are the perfect solution for that craving.

  1. 1 cup oats
  2. 1 cup cottage cheese
  3. 6 eggs
  4. 1 tsp vanilla
  5. 1/4 tsp cinnamon
  1. Combine all ingredients in blender and blend until smooth.
  2. For each pancake, add approximately 1/4 cup of mixture to heated skillet.
  3. When the top of the pancake begins to dry and/or bubbles, flip. Allow to cook for another minute and remove from skillet.
  4. Stack them high and enjoy!
