Chocolate S'mores Cookies

When I think of summer time, I can’t help but think of s’mores. I am not a fan of camping (unless there is a cabin with running water involved), but I am a fan of summer fires and roasting marshmallows. These cookies are a great way to have the s’mores inside without the fire, which is always a good idea when you are living in Arizona and it doesn’t get below 90 in the summer right? One more great thing about these cookies: they are gluten free if you leave out the graham crackers! Heres’s what you’ll need:

1/2 cup unsalted butter softened
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 egg
1/2 tsp Vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
1 cup cocoa powder
3 whole graham crackers (crushed up)
1/4 cup semi-sweet chocolate chips
1/4 cup mini marshmallows
about 24 small marshmallows

Pre-heat oven to 350 degrees. Cream together butter and sugars until smooth, then add egg and vanilla. Once wet ingredients are well combined add dry ingredients one by one just until you can’t see them anymore. Then slowly fold in the cocoa powder. When the cocoa powder is fully incorporated you’ll fold in the chocolate chips, mini marshmallows and crushed up graham crackers. If you would like to make these gluten free, you can leave out the graham crackers. Once all of the ingredients are fully combined scoop 12 cookies onto a parchment lined baking sheet. Bake for 10 minutes, then take out and push one-two small marshmallows into the center of each cookie. Place the cookies back in the oven for two – four more minutes.. The best part about these, besides them tasting amazing once they are done, is that they smell amazing while they are baking (jut like brownies)! Take out and let cool for five – ten minutes then enjoy!
