Chocolate Covered Peanut Butter Cookies

My fondest memories from my childhood involve baking with my mom. Whether it was lamb for dinner (which was a regular occurrence in our house) or an elaborate cake for a catering order, I was always there with her to help or at least just lick the spoon. I would sit on the counter next to her while she worked, observing everything she did. She passed away when I was seven and I will always remember those times spent with her baking. A couple of years ago when I was moving I found several of her hand written recipes and was taken back to those great memories of baking with my mother. This recipe is one of those recipes and one of my favorites to make. Typically I make them at Christmas time with chocolate kisses in the middle, but this recipe is a spin on that cookie that can be enjoyed by peanut butter and chocolate lovers year round.

INGREDIENTS
3/4 cup butter softened
1 cup creamy peanut butter
2 eggs
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp salt
2 1/2 cups flour
Melting chocolate
Mini Reese’s Pieces

DIRECTIONS: 

In a large bowl cream together the peanut butter and butter with the brown sugar. Once well mixed, add eggs one at a time until well combined. Then add all your dry ingredients until your dough looks like one big ball of peanut butter doughy goodness. Form your dough into a ball and wrap in plastic. Refrigerate for one hour. Pre-heat your oven to 375 degrees. Shape dough into 1 – 1 1/2 inch balls about 2 inches apart on an ungreased cookie sheet. Once you have all your cookies on your sheet, take a fork dipped in flour and press down a # in each one. bake these for about 10-12 minutes, or until golden on the bottom. Make sure not to overcook these or they will be super dry. Once they are done, remove and place on cooling rack until cool to the touch. Then melt your chocolate according to the directions on the package. Once melted, take each cookie one at a time and dip half into the chocolate. Transfer back to the cooling rack for the chocolate to harden. If you want a little more peanut butter and chocolate, place just a couple of mini Reese’s Pieces in the chocolate before it hardens. Let them sit until the chocolate is completely set and enjoy!
